BARLEY AND VEGETABLE STEW

Barley and Vegetable Stew (Kapha Pacifying Lunch)
This Barley and vegetable stew is an excellent recipe for those looking to pacify Kapha. It includes barley which possesses light and dry qualities that counteract the heaviness of kapha. It has assorted vegetable and spices that are specifically kapha pacifying making this dish not only nutritious and kapha balancing but also flavourful.

Ingredients –
* Barley – 1cup(pearled, rinsed,soaked for 30min.) • Carrots – 2 (diced)
* Celery – 2(diced)
* Spinach – 1cup (chopped)
* Green Peas – 1/2 cup
* Ginger – 1tablespoon (grated)
* Turmeric – 1 teaspoon
* Cumin seeds – 1teaspoon
* Black pepper – 1/2 teaspoon
* Vegetable broth (low sodium) – 4 cups
* Olive oil – 1 tablespoon
* Lemon juice – 1tablespoon
* Salt – to taste

Instructions –
* Place a large pot with 1 tablespoon olive oil over medium heat.
* To it add cumin, diced carrots and celery and cook for about 5 minutes.
* Add the grated ginger, turmeric and black pepper.
* Drain the barley and add to the pot along with 4 cups of vegetable broth. Bring to a boil.
* Cook on low heat for about 25 minutes, until the barley is tender.
* Now add the spinach and green peas and cook for another 5 minutes.
* Lastly add salt to taste and lemon juice.
* Serve hot for best flavour.
