CHICKEN KEEMA PARANTHA

Chicken keema Parantha is a wholesome high protein breakfast which is both nutritious and delicious and also pacifies Vata dosha.
It combines Chicken keema alongwith aromatic Ayurvedic spices stuffed into whole wheat dough and cooked with Ghee which further enhances its richness.

Ingredients –
For the Dough –
• 2cups – whole wheat flour
• Water – as per requirement
• 1/2 teaspoon – salt
• Pinch of ajwain(carom seeds)
• 1table spoon – ghee

For the filling –
• 500 gm – Chicken mince
• 1tablespoon – Ghee
• 1medium sized – onion , finely chopped
• 1table spoon – Ginger Garlic paste
• 1/2cup – peas(fresh/frozen)
• 1-2 – green chillies, finely chopped (optional)
• 1teaspoon – Garam Masala
• Salt to taste
• Fresh Coriander leaves, chopped
• 1/2teaspoon – turmeric powder (optional)

Instructions –
• Preparation of Dough –
In a large sized bowl, mix whole wheat flour, salt, carom seeds, and ghee. Mix all the ingredients properly, so that they are evenly combined.
Now knead a soft dough by gradually adding water. Once the dough is eady cover it and let it Rest for at least 20minutes.
• Preparation of filling –
In a hot medium sized pan pour 1tablespoon of ghee. Now add onions, green chillies and ginger garlic paste and saute` them until cooked properly. Now add chicken mince and cook over low flame until colour changes. Then mix peas, garam masala and salt. Cook till the mixture is dry and finally add in the coriander leaves.
Allow the mixture to cool down.
• Preparation of Parantha –
Take a small amount of dough and roll it into a ball. Now with a rolling pin flatten this ball into a small circle. Place a generous amount of filling in the centre and gather the edges to seal it.
Again flatten this filled dough and roll it out to make a circle of about 7-8 inches diameter.
Cook it on a skillet over medium heat by applying ghee over both sides.
Cook until both sides are cooked evenly and look golden brown .
Serve it hot with butter, curd, pickle or chutney.

Effect on Vata Dosha –
• It is an excellent dish for balancing Vata dosha as it is both grounding and nourishing.
• Ghee balances out the dryness of Vata.
• The spices used in this recipe balance out the coldness of Vata with their warm quality.
