Spiced Turmeric and cumin eggs
This is a flavourful egg dish infused with warmth from turmeric and cumin, freshness from coriander and tomatoes and a hint of heat from green chilli. This recipe makes a comforting and nutritious meal.
Ingredients –
• 4 large eggs
• 1 tablespoon water
• 1/4 teaspoon – turmeric powder
• 1/2 teaspoon – ground cumin
• 1 small tomato, finely diced
• 2 tablespoon fresh coriander, finely chopped
• 2 tablespoon – ghee
• Salt to taste
Instructions –
• Crack the eggs in a medium sized bowl.
In it add water, turmeric, cumin and salt.
• Now with the help of a fork or a whisk, beat the eggs and spices together.
• Stir the tomatoes, fresh coriander and green chillies into the egg mixture gently.
• Heat a skillet or frying pan over medium heat and add ghee.
• Once the ghee melts, pour in the egg mixture.
• Let it sit for about 30seconds, so that the bottom sets slightly.
• With a spatula, gently stir and fold the eggs from the edges towards the center till the eggs are fully cooked but still moist.
Once cooked serve the eggs warm garnished with fresh coriander.
