Ingredients –
• 1cup – millet (rinsed)
• 3cups – coconut milk
• 2tablespoon – maple syrup
• 1teaspoon – Vanilla extract (optional)
• 1/2teaspoon – ground cinnamon
• 1pinch – salt
• 1cup – diced peaches or pears
Instructions –
• In a medium saucepan add the millets alongwith the coconut milk, over medium heat.
Stir to mix.
• While stirring sprinkle a pinch of salt and cinnamon. Reduce the heat to low and allow the mixture to simmer gently.
• While the millets cook, stew the diced peaches or pears in a small saucepan.
• Add the diced fruits with a splash of water or additional maple syrup. Cook over medium heat until the fruit is soft( it usually takes around 10-15 minutes).
• Stir the millets occasionally, so that they donot stick to the bottom of pan.
• Cook the millets for about 25-30 minutes till they are creamy and cooked properly.
• Once the millet is cooked, remove from heat and stir in the maple
syrup and vanilla extract.
• Serve the creamy millet porridge, topped with the stewed peaches or pears.
