TURKEY & SPINACH SCRAMBLE

Turkey and Spinach Scramble
The Turkey and Spinach Scramble is a dish that is nutritious and delicious and pacifies Kapha dosha according to Ayurveda. It is a meal that supports overall wellbeing and is packed with lean protein, fiber and essential nutrients.

Ingredients –
* 2 large – eggs
* 1/4 cup – fresh spinach leaves (chopped)
* 1/4 cup – diced onion
* 1 clove garlic (minced)
* 1/4 teaspoon – turmeric powder
* Salt and pepper to taste
* 1 tablespoon – Olive oil

Instructions –
* Place a skillet or frying pan over medium heat.
* Pour 1tablespoon olive oil and add onion and garlic, saute until onions become transluscent.
* Add Cooked ground turkey to it and stir well.
* Toss in chopped spinach leaves and cook until wilted.
* In a separate bowl, beat the eggs with turmeric powder, salt and pepper.
* Pour the beaten eggs over the turkey and spinach mixture in the skillet.
* Gently scramble the eggs until cooked.
* Remove from heat & serve hot.
