“Coconut Lentil Curry”

  • Ingredients:-
  • 1 cup red lentils
  • 2 cups water

  • 1/2 teaspoon turmeric powder
  • 1 small onion, finely chopped

  • Preparation Method:-
  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a large pot, heat the coconut oil over medium heat. Add the mustard seeds and cumin seeds. Once they start to pop, add the onion, garlic, and ginger, sautéing until the onions are translucent.
  3. Stir in the turmeric, cooking for another minute to release its fragrance.
  4. Add the rinsed lentils, water, and coconut milk to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the lentils are soft and the curry has thickened.
  5. Season with salt to taste. Garnish with fresh cilantro before serving.
