Warm cinnamon quinoa with dates

During th summer, it is of critical importance to balance vata and maintain and overall balance within the body.
This recipe not only pacifies vata dosha but also provides grounding and stability to the body. It is very delicious dish that supports digestion and nutrient absorption.

Ingredients –
* 1cup – cooked quinoa
* 2 ripe – bananas (mashed)
* 1/4 cup – dates (chopped)
* 1/4 cup – almonds/walnuts (chopped)
* 1teaspoon – cinnamon powder
* 1tablespoon – coconut oil
• 1tablespoon – maple syrup/honey

Instructions –
* Take 2 cups of water in a medium sauce pan and heat it over medium flame.
* Once the water is warm add quinoa to it and bring it to a boil.
* Then reduce the heat and let it simmer for another 15 minutes, until most of the water is absorbed.
* Now in a bowl, mix this cook quinoa (after cooled down), mashed bananas, chopped dates, chopped almonds and walnuts and cinnamon powder.
* Heat coconut oil in a pan over medium heat and add quinoa mixture to it.
* Stir occasionally, and cook for 5-7 minutes until it starts to caramalize.
* Drizzle some maple syrup or honey if desired.
* Serve warm and enjoy this sweet treat as a part of a balanced diet to promote overall well being.
